Mom’s Macaroni & Cheese
1-8 oz. package Elbow Macaroni
4 T. Butter
4 T. Flour
1 t. Salt
¼ t. Black Pepper
2 cups Milk
1 cup American Cheese, cut into small pieces
Melt butter, add flour, salt and pepper, whisk until smooth. Add milk slowly, whisking to blend. Cook until thick and smooth, add cheese and stir until melted.
Cook elbow noodles as directed on package. Drain and pour into a baking dish. Pour cheese sauce over cooked noodles. Bake at 350° for 15 minutes or until lightly browned. Serves 4-6.
*It’s best to use a double boiler or non-stick pan to make your cheese sauce.
